Tough!!!!! Chicken

Well we have reached the time when our chicks have grown and are now ready for laying/ eating :yum:. Sorted out 3 cockerils and dispatched them quickley. Theses werev cooked or sunday lunch. Tough.... Tough....is not enough of an exageration. We had one and our friends had some and they all said that they were tough and unedible??? any idea??

Not sure about this one. Maybe they didn't rest up enough? I dispatch, immediately bleed for 15 mins, then pluck, gut and leave to hang for 24 hours in a cool room. Then I truss up into roast chicken shape, bag them and let them sit in the fridge for 3-5 days before I freeze or cook them.
