Icecream.

we are going to make our own icecream this weekend. anyone recommend a recipe? we are looking for vanilla and strawberry, and we have cows and goats milk.
its took me 10 yrs to get round to it so major commitment !!  :excited:

I am en route to woolfest or I would give you my delicious vanilla recipe - sorry!  Make sure you make a proper custard based one with real vanilla pod - it makes a huge amount of difference!  Good luck!

yes, we have vanilla pods and also vanilla bean paste which iv never seen before .im sure there is a video on bbc website somewhere for real vanilla so just off to find it  :excited: :fc: we have a big tray of strawberries onhand too  :thumbsup:

Mary Berry made some 'real' vanilla ice cream which you should be able to find on line
Life is like a bowl of cherries, mostly yummy but some dodgy bits

wev had a shot and are waiting for it to freeze. tastes great at moment though i wasnt sure if the eggs had curdled as i used a spoon not a whisk (packed that already - duh) tho after straining it looked fab. all cream so will add a few pounds  ::) :innocent:
made a strawberry sorbet too.  :o

we followed this recipe but now searching for one with a few less calories. its really nice. the kids keep saying it tastes like custard. (they are used to supermarket own brands stuff)  :eyelashes:
i thought it was quite pricey to make but looking at the price of haagen daaz at tesco - mine was 50% cheaper  :thumbsup:

H F Whittingstall has a great recipe in his "Family cookbook". I use that as a base for vanilla and coffee icecream. Except I make the custard with milk instead of cream, then add the cream to the amount I need for the icecream maker.

the icecream was delicious but we are looking for a milk based recipes as we dont need anymore inches added to our waists at the moment!

Recipe I use is:
Separate 4 eggs
yolk in one pot, white in Kenwood
whisk white till stiff add 4 oz icing sugar and carry on whisking
Meanwhile add 300ml pot double cream to yolks + flavouring/fruit and beat with stick blender
Add pot to Kenwood and whisk to mix.
Pour into 1.5 l container and  freeze.
Simple and no cooking involved, but we also could do with a less calorific version!!

Just found my book!


Leche Meringada
425ml milk
150ml whipping cream
150g caster sugar
1 tbsp brandy
3 egg whites (knew there was a reason why I tried this recipe!  Always have spare whites!)
1 cinnamon stick
Peeled rind 1 lemon (no pith)


Put milk cream and 100 g of the sugar lemon rind and cinnamon and bring to just under theboil. Remove feom heat and leave to infuse 40 minutes.  train mixture and add brandy.
Whisk egg whites with remaining sugar until stiff and fold into cooled mixture.  Churn or still freeze.




It's really refreshing and light, and is fantastic with cold or hot expresso poured over it - enjoy!

we use an Andrew James automatic ice cream maker. It comes with a 120 recipe book
the basic vanilla  recipe is
1 cup of milk (we use goats)
2 cups of double cream.
3/4 cup of sugar but we only use half
half a spoonfull of vanilla essence
