Leche Meringada
425ml milk
150ml whipping cream
150g caster sugar
1 tbsp brandy
3 egg whites (knew there was a reason why I tried this recipe! Always have spare whites!)
1 cinnamon stick
Peeled rind 1 lemon (no pith)
Put milk cream and 100 g of the sugar lemon rind and cinnamon and bring to just under theboil. Remove feom heat and leave to infuse 40 minutes. train mixture and add brandy.
Whisk egg whites with remaining sugar until stiff and fold into cooled mixture. Churn or still freeze.
It's really refreshing and light, and is fantastic with cold or hot expresso poured over it - enjoy!
