Yes, we buy rolls of plastic film and cut to length depending on what we're packing. We freeze all sorts from mince to whole legs of lamb and large roasting chickens (9-10lbs).
One thing I have found is not to try to scrimp - the plastic is washable & can go in the dishwasher if necessary. So I usually oversize my packs - that way once I've cut off the top of a pack, it can be washed & then re-used - though of course it is a little bit smaller.
Vac-packing reduces freezer burn and we find that meat & fish keeps well for many months. The plastic is microwave safe too, so the frozen food can go straight from freezer to microwave and gets defrosted in the plastic.
