RASPBERRY CURD

1kg rasps,450g sugar,115g diced butter,4 large beaten eggs
chuck berries and 2 tablespoons water in pan,bring to boil,simmer covered for 5 mins or till very soft.
rub it through a sieve into double boiler or glass dish over pan of simmering water.
add sugar, butter, eggs whisk with balloon whisk until sugar and butter melt.
simmer, stir constantly with WOODEN spoon until thickens turn off the heat stir for 5 mins to cool.
pop in hot sterilised jars, leave to cool and keep in fridge

 neither are mine.. wish they would hurry up:P
RAspberry liquer.... 1lb rasps, 1 bottle gin chuck them togethr for 2 week,strain
make sugar syrup, add gin leave 2 weeks mmmmm mmmmm :yum: SIMPLE

Love the idea of Raspberry Curd must try it. Would make a change from Rasp jam.

Yes - everybody got raspberry jam for Christmas last year - this year it'll be raspberry curd ....... very original :-)

I love collecting stuff out on walks and there are loads or Raspberries around, not ready yet but I may try that recipe...I say may as I never get around to do fancy stuff these days due to the nature of guests being around!!

Sure does as does whisky - raspberry whisky is fab! and I don't like whisky! ::) Raspberry Vodka is wonderful stuff.  But you can use other berries too.  I prefer vodka and have made liqueur with rasps, strawbs, brambles (Blackberries to sassenachs lol)

Curd i dont think so.
 Alcohol not sure
Dont like strawberries though :wave:

gooseberries are ready try gooseberry curd too

Just made nectarine jam.... it is well yummy :wave:

Just made the raspberry curd and it tastes wicked!!! cant wait to pick some scones and clotted cream up to have a try!
