When we send the odd goat down for slaughter, the abattoir usually hangs for a week or so before it comes back to us but this time they sent it back up to us after 2 days
The chef in the hotel where he was going to wanted him hung for a week and luckily we had access to a meat larder so we could hang him ourselves but this may not always be possible, especially during shooting season. I know the abattoir have rearranged their delivery days so not sure if thats the reason why they send him up earlier than normal?
