When we send the odd goat down for slaughter, the abattoir usually hangs for a week or so before it comes back to us but this time they sent it back up to us after 2 days ???
The chef in the hotel where he was going to wanted him hung for a week and luckily we had access to a meat larder so we could hang him ourselves but this may not always be possible, especially during shooting season. I know the abattoir have rearranged their delivery days so not sure if thats the reason why they send him up earlier than normal?

Mine are usually hung for a week and I've used two different abattoirs.

Usually take mine in on Monday morning and meat is cut Friday or Saturday for sheep and goats unless I ask for it to be hung longer because it's older animals.

well he was on the menu last night and received lots of compliments :thumbsup:
Next time I'll check with the abattoir just incase I can't use the meat larder

We usually hang ours for a week as its so lean and it won't keep for too much longer as it gets very sticky.
