butchery book

I preparation for the time when our lambs go for their one way holiday where they don't need to pack an overnight bag (sounds nicer to children than the abatoir!) I am looking at home butchery of the carcasses.  I have yet to find a local butcher who will show me how to cut the meat up, but that would be the best option.  So does anyone know a butcher near to Warrington who would do this?  Failing that / as well as that, does anyone know of either a book or youtube clip or similar that shows how to turn the carcass into joints of meat? Many thanks in advance.

there are some great youtube films on complete carcass butchery...

i found this one particularly interesting, but there are others that are perhaps more informative if you want to do it yourself...

I don't know if it is any good as I have not purchased it yet but there is a book on ebay called  Butchering Poultry, Rabbit, Lamb, Goat & pork by Adam Danforth £11.67 & free postage.
