Marrow recipies
« on: September 03, 2013, 10:11:54 pm »
I've been given three rather large marrows by a neighbour, does anyone have any fabulous recipies? I need some inspiration. I'm the only one in the house who eats chutney, so don't want to go too mad with that, though a good recipe might tempt me.
Any ideas?
Thanks

Stuffed marrow, marrow rum... (Don't have recipes, though.)

I'm thinking of doing marrow rum as well. It sounds fairly easy.
I can't work out how to do a link from my iPad but there are lots of recipes if you google it.

Otherwise I have just been adding mine in chunks to soups quite successfully. You could then freeze the soup so can use up quite a lot.

Sarah Raven Recipe - marrow and coconut soup: 1kg marrow, large onion, clove garlic, olive oil, tin coconut milk, 1 litre  chicken stock, mint and basil. Soften onion in oil, then add peeled/deseeded/cubed marrow, garlic, half stock and most of mint and basil. Cook till soft 10 mins or so, stick blend, add coconut milk and rest of stock. Heat up, top with rest of bits of mint and basil to serve. It is great. Can freeze. Written from memory but we make it a lot so I think that's about right, I'll let you know if it is substantially different

I don't like mint and don't have any basil. Do you think it would work without these?

Oops I forgot the teaspoon of fresh grated ginger. You don't like mint...weird. Yes the recipe can be reduced to: onion, marrow(or courgette), stock, coconut milk

I have never made marrow rum but the details are on the Internet. Briefly, cut the top off the marrow and scoop out the middle and fill with Demerara sugar. Hang it up covered in muslin or an old sock and let it drip.

Just made the marrow and coconut soup. I think I used too much marrow as it watered down the coconut milk effect a bit too much but other than that it is really quite nice. I now have lots for the freezer and will make some more when my weekly grocery delivery arrives with more coconut milk  :)

I make my mum's Marrow and Ginger jam recipe every so often. I love it but my kids are not convinced so I can't overdo it. The marrow basically adds the texture - it tastes of ginger (kids problem, I think). Will dig it out if anybody interested?

I have found my dog loves it. I did stuffed marrow and ate all the nice bits, just leaving a bit of the marrow and the skin. I put the plate down for the dog expecting him to lick the gravy but he made a great meal of the marrow and skin.
Today he took the raw end of marrow out of the rubbish bin and ate all that too.  ;D
