Red peppers - chutney?

My windowsill peppers are finally changing to red  :excited:  I've managed to get them to produce between 2-5 peppers per plant  :thumbsup:
I don't think it's worth keeping them on the plant much longer - we will eat some raw in salads and cooked in frutata, but thought it would be nice to preserve some for the winter - any ideas? (remember we have no oven  ::)  )

id skin some (char them in a gas flame then bung in a bag to sweat) then take out the seeds and cut the flesh into quarters lay into sterile kilner jar (thats the tricky bit with no oven) and cover in good olive oil they keep really well and can be used in salads or cooking...

That sounds like an idea - but we don't have gas here - is it possible to skin them by scalding, the same as tomatoes?
Sorted the jar sterilising problem last month, for my jams & jellies, boiling them on the stove  :thumbsup:

i've only ever done it on gas either hob or blowtorch someone else may know about the skinning process though...

Actually we froze a lot of red peppers last year and they are fine thrown in a Tajine, sweet and sour or any other long cook receipe.
They seem to continue to ripen inside the house if it is too wet or a frost is likeley.
