Hot chilli, apple and tomato chutney

I made a big batch of chutney today - well, it took me three days with all the chopping  ::)
 
3 lbs red tomatoes, mostly cherry, some chopped big ones (started off green but had ripened in the bowl by the time I got round to making the chutney  :D )
3 lbs chopped onion
3 lbs peeled and chopped Bramleys
2 heads of garlic, peeled and chopped/crushed
1 lb sultanas
about a dozen hot red chillis, or to taste.
1 lb light brown sugar
tube tomato paste
1 1/2 pints malt vinegar
various spices - ginger, mixed spice, paprika, mustard powder, mustard seeds (crushed), cumin, coarse black pepper, a little salt.  I use a lot of the spices, but just put in what you prefer.  To decide on how much to use, I imagine how much would go into each jar, using the expected yield, then multiply it up.
 
All cooked together without the vinegar until the apples and onion are soft, then add in the vinegar, bring to the boil then simmer until the desired consistency is reached.  Pot into hot jars, apply wax discs and lined screw on lids.  Leave until at least the New Year to try.
I had a little taste and it is HOT.  I used the hottest chillies I had, which were dried a couple of years ago.   It's looking good  :hungry:

It sounds lovely but I am sure I could never wait until New Years day  ;D

We still have some older stuff to work our way through.  The new stuff goes under the bed until it's ready.  I think I will make some apple and date chutney too, as it goes well with cheese, then that will be it for another year  :yum:

Mmmm, I love apple and date or apple and plum chutney.  I like those that have a sweetness about them. Lovely with cheese
