I think you are in for a lot of work, but you'll get there in the end.
I suggest you start with the orchard, spend this winter pruning all those trees, except plums, gages, damsons and cherries which you prune in summer. You will likely get a big crop of fruit after pruning, so think in advance what you are going to do with it. Organise storage, fruit press and bottles for fruit juices to sell, perhaps jam and chutney making.
The mud will dry up in the summer so try to stay off it until then. Cut back the brambles but leave the scrub until next year.
