Cajun Meat Loaf
Ingredients
- 1 large onion
- 2 celery sticks
- 1 deseeded green pepper
- 2 garlic cloves
- 1 teaspoon dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons chilli powder
- 1 teaspoon ground cumin
- 1 teaspoon ground nutmeg
- 1lb 10 oz beef mince
- 9oz pork mince or good quality pork sausages (skinned)
- 3oz breadcrumbs
- 2 large eggs, beaten
- 1 170g tin evaporated milk
- 1 220g tin of chopped tomatoes
This makes enough for two loaves in 2lb loaf tins. If you can't eat that much at a sitting the loaves do freeze very well - just reheat in the oven after defrosting completely, making sure they are heated right through.
Instructions

Finely chop the onion, celery and pepper

Cook the vegetables in a tablespoon or two of vegetabke oil for a few minutes until soft.

Add the garlic and cook for another 5 minutes.

Add the herbs and spices; cook for another minute or so then take off the heat and leave to cool.

Mix all the other ingredients together in a large bowl; add the cooled vegetables and mix well.

Pack into loaf tins and cook at 190/375 or gas mark 5 for one hour or until a metal skewer inserted for 10 seconds is hot to the touch. Allow to stand for 15 minutes, drain off any liquid and turn out.
Serve with baked beans and baked potatoes. Yum.
