Coconut Cookies
Ingredients
- 100g soft brown sugar 100g SR flour
- 100g desiccated coconut
- 150g porridge oats
- 100g butter
- 4 tablespoons golden syrup
- ½ tsp bicarbonate of soda, dissolved in 2 tbsp boiling water
Delicious coconutty cookies, can be slightly undercooked to be chewy or over to be crunchy.
Instructions

Mix flour, coconut, oats and sugar in a large mixing bowl

Melt the butter and golden syrup in a pan.

Add the dissolved bicarbonate of soda to the melted mixture and mix well.

Make a well in the dry ingredients and add the melted mix. Mix well.

Roll the mixture into balls about the size of a large walnut.

Place on a greased baking tray and flatten slightly.

Bake for 10-15 minutes at 180C / GM4.
Cool on a wire tray, serve with cold milk or hot chocolate.
