Coconut Cookies

Ingredients

  • 100g soft brown sugar 100g SR flour
  • 100g desiccated coconut
  • 150g porridge oats
  • 100g butter
  • 4 tablespoons golden syrup
  • ½ tsp bicarbonate of soda, dissolved in 2 tbsp boiling water

Delicious coconutty cookies, can be slightly undercooked to be chewy or over to be crunchy.

Prep: 10 mins Cook: 10-15 mins Serves: 16

Instructions

  1. Mix flour, coconut, oats and sugar in a large mixing bowl

  2. Melt the butter and golden syrup in a pan.

  3. Add the dissolved bicarbonate of soda to the melted mixture and mix well.

  4. Make a well in the dry ingredients and add the melted mix. Mix well.

  5. Roll the mixture into balls about the size of a large walnut.

  6. Place on a greased baking tray and flatten slightly.

  7. Bake for 10-15 minutes at 180C / GM4.

Cool on a wire tray, serve with cold milk or hot chocolate.
