The mothership tomato salad:
1kg mixed ripe tomatoes
Sea salt & freshly ground pepper
good pinch of dried oregano
red wine or balsamic vinegar
extra virgin olive oil
1 clove garlic, peeled & grated
1 fresh red chilli deseeded & chopped
Put tomatoes in colander & season with a good pinch of sea salt. Give them a toss, season again and give a couple more tosses. Salt will draw out the excess moisture leaving all the flavour. Leave tomatoes in colander for around 15 mins - discard any juice that comes out.
Transfer to a large bowl, sprinkle over the oregano. Make a dressin using one part vinegar to 3 parts oil, garlic & chilli. Drizzle all over & toss.
