4lb green tomatoes, washed and chopped,
1 1/2lb shallots or onions, peeled and chopped,
1lb cooking apples ,peeled cored and chopped,
1 pint vinegar,
level tsp of crushed dried chillies(as a guide add more or less to what you like)
Ioz dried root ginger( I use powder equivelent),
8oz seedless raisins,
2tsp salt
1lb sugar.
Put the onions , tomatoes and apples in a heavy based pan and add half the vinegar. Bring to the boil and simmer for 30 mins until tender.
Add ginger, chillies and raisins and cook for an hour, stirring occassionally until the mixture thickens.
Add the salt and sugar and the rest of the vinegar. Stir until the sugar dissolves. Cook until the mixture is thick then pot and seal.
I got the recipe from a book called Farmhouse Cookery from the Readers Digest. My Mil gave it to me many years ago and has been my bible for self sufficiency recipies.
