Very hot chilli sauce

A little while back on another post i promised i would ask my OH for his very,very,very,very hot chilli sauce,well tonight he has just made another batch so here we go.

In a coffee or spice grinder mix together

1 tbsp Cumin seeds(jeera)
1 tbsp Black pepper corns
1 tbsp Sea salt
8 dry bay leaves

remove
then mix in a blender

1 inch peice of ginger chopped
3 Garlic cloves
1 tsp Sea salt
1/2 juice from a fresh lemon
20 Scotch bonnet chilli  stems off

Add both mixtures together and add around 200-300ml of water.
Then blend to how coarse you like your sauce.


BE WARNED THIS SAUCE IS EXTREMELY HOT AND NOT FOR THE FAINT HEARTED.

Looks great, but I'm a bit of a wimp when it comes to chillis! If I used milder chillis rather than scotch bonnets, would I need to make any other alterations do you think?

He says no will taste just as good but just not as hot.

Thanks for posting this recipe...I love chillie sauce ( Lingrams is my fav...eat it with everything!) and as I have managed to grow quite a few chillies this year, instead of freezing them all, I will make some of this sauce.....all be it a little less scary! Might buy a couple of scotch bonnets to add to mix tho!

When any of you have made it please can you give me some feedback good or bad,as OH is hoping to do a book of indian dishes and sauces.
