Getting hold of milk
« on: July 13, 2010, 08:14:09 pm »
Is there any way I can get hold of milk for cheese making without getting shop-bought stuff or buying a cow?

I don't know any local smallholders round here who have a cow.

What are the rules about bypassing supermarkets for milk?

I don't know about where you are , but round here , most farmers would sell you some milk for making cheese without problems . I have no idea if it is legal or not , but as long as they know you round here you could have as much as you wanted .
If you do buy from a dairy farm , unless they have their own treatment equipment , the milk will not be pasteurized so even better for making your cheese . It will just be chilled . I don't think it will keep quite as long as shop bought milk though , that's one reason why they zap it !!!
I have made cheese from both shop bought pasteurized  and farm bought raw , farm bought worked the best . If you use it just as milk though , it does taste a bit different to shop bought ( better) .
 good luck ...

cheers
