beetroot uses?

I am going to have a lot of beetroot this year so am looking for ideas for what to do with it! What do others do? Ta  :wave:

well you could give it all to me of course!!

failing that:
pickled
roasted with some balsamic over it
spicy beetroot soup (fab & freezes well too)
cake (yes, beetroot cake is delish - made it a couple of times so far already)
brownies *HFW recipe)
salads

is that enough to be going along with?

Hello vair look in recipes I will post you a recipe thats different after tea.She wot I am frit on has just brought it in ;D :wave:

I presume I have to peel it before roasting? ::) ::) ???
To pickle it do I just boil it then shove it in a jar with vinegar? Cheers

Yeap boil (approx 30 mins) remove skins then put in vinegar to pickle it.

Oh i slice mine before i put em in the jar , you might want to wear glove cos your hand become purple lol

And going to try beetroot chutney tomorrow

Just finished making pepper pickle, pineapple n red onoin relish and hot pepper relish,  :yum: :yum:

nope!  peel AFTER boiling or roasting - in fact you dont even peel, you just rub the skins off

Hey up egglady is that the proper way of saying slough the skins off? ;D It is most intriguing how just at the right time they will almost peel them selves :farmer: won't they. :D

A very simple one: Boil 3 or 4, cube, drizzle with a little olive oil and crush a garlic clove in it, mix it up a bit and bung in the fridge for a couple of hours :D

if you have an excess roll it down the hill to us, I can't grow enough to make Beetroot Relish with....

Dead simple recipe though - Beetroot in blackcurrant Jelly.  Boil and rub skins off the beetroot, make up the jelly as per instructions using vinegar instead of water and disolve a good spoonful of sugar in it.  Dice beetroot, put into jars and top off with the jelly mix.  Leave for a month or so.  If you have grown the orange one use an orange jelly.

Hi guys been away on holiday for a week so sorry for lack of replies!
I ended up pickling all my beetroot and damn fine it is too! Got a shock one morning after eating a load the night before - thought I had finally drunk so much I had knackered my liver and was weeing blood  ::) ::) ;D  :o
Twas only the beetroot  ;D :wave:

Beetroot Chutney

1 lb onions (chopped)
1 pint spiced white vinegar
3 lb cooked beetroot
2 tsps salt
1 lb apples
1lb white sugar

cook the chopped onions for a few minutes in a bit of the vinegar

add the rest of the ingredients (except the sugar) and cook gently until the apple is soft stirring every so often

now stir in the sugar thoroughly and boil steadily until the chutney is thick

pour into hot jars

the beetroot should be diced in very small pieces and if you wanted to you could add 8oz of pale sultanas.
