Why not plant specifically for fodder?  Pollard your trees, bind the fresh branches and use them as a winter feed and the trees will sprout back with astonishing vigour the following spring to provide all the shade and protection you need.

Oak, Ash, sycamore are all hebsafe.

Acorns, whilst not poisonous per se, can block the sheep's stomach with all those rounded things, which can't move on, so the sheep starves to death, or gets acidosis (or whatever 'stagnation in't stomach' might be  :eyelashes: ).
Saplings which have not developed the corky bark of a mature Oak, are fair game.
Mine love the bark of Ash, not sure about the leaves.
No experience of Sycamore

Acorns not safe for horses. They love Ash.

To save heartache I would plant behind a fence bearing in mind horses have a good reach.

Maybe some artificial Christmas trees?  You could even lift them up to mow under them! :D

An oak tree wont produce acorns until its 20 - 30 years old, so would this really be an issue?
