I have been making perry and cider for a few years and use whatever apples or pears I can get hold of, I have made some really good stuff and some very bad (turns your head inside out). It is a matter of trial and error and recording what apples or pears that you use, But different years different sugar levels in the fruit. The best thing to use is the pure juice and build or invest in a press.
