Does anyone know what the rules are if you use your own eggs in catering that you then sell to the public?

I know you can sell direct to the consumer without registering etc - does the same thing apply if you cook them or mix them into a cake first? 

I have just got a catering trailer and a glut of eggs and I'd love to use my eggs on the trailer!

I don't think the same rules apply. I know I can't sell my eggs to the local B&B as they are not stamped.

That's selling to someone who is selling on to the cosumer, so I can see that needs stamping etc, but this is selling direct, but not "in shell"... Can't find info anywhere!

I was on a food hygiene course recently and someone asked about using their own eggs at breakfast time and I am sure that the answer ran along the lines of as long as the hens were vaccinated it should be ok.  Since this part of the conversation didn't really concern me I am afraid I zoned out!

If you have a catering trailer why not speak to your local council food hygiene person.  They are more than happy to help people with advice and they are the ones who should know the answer to your question.

I'm not sure what happened to your post Shetlandpaul, but as far as I can make out, you're talking about selling the eggs as eggs (raw, in their shells) rather than in cooking.  Presumably, in that case candling is not necessary as they're cracked open and can be visually checked.
