Butchery costs...(again!)

Hello folks,


Still struggling to calculate butchery costs for pork.  Got a price list through for one of the local butchers that the abattoir has suggested - their initial 'pork processing fee' is £1.20 per kilo, excluding bacon/sausage charges.  Is that deadweight?  Or is that per kilo of eventual meat?  Also, how does £1.20 compare to other butcher?

I would guess "per kg of deadweight". That's how much our butcher charges. Then sausage and bacon is extra.

£1.20 sounds about average.
It'll be based on the carcass weight given by the abattoir.

I pay £40 for kill and cut, up to 100kg and then 1.80 per kilo for sausages, 2.50 for gluten free sausages.
