Store Cupboard Recipes

Here a bit of a comp here.

You have basic food stuff in your fridge/freezer, Cupboards, what can you make from it ?

eg

egg on toast

boil/ fry/ scramble or poach the egg and then toast your bread then place eggs on toast and season to taste.

Anyone got any good gap filling recipes ?

I had to 'invent' today as we'd run out of bread at lunchtime !
Pasta salad, I mixed mayo, tomato sauce, tabasco, balsamic glaze, pinch of paprika with chives, sweetcorn and chopped peppers, stuck the pasta in after it had cooled and I have to say it was lovely. Even my doubting hubby had to admit it was good (either that or he was scared he'd go hungry  ;))

shepherd's pie

got it from 'The students grub guide'

1lb of mince beef
1 onion, peeled and chopped
1 clove of galic, peeled and finely chopped
1 tin of tomatoes (optional)
1 tbs of tomato puree
1 tdp of mixed herbs
salt
Pepper
2 tbbs of oil
5 medium potatoes , peeled

Heat the oil in a largish saucepan, add the onion and garlic , and fry for 3-4 minutes, Add the meat and cook for another 10 minutes.
While this is simmering, cook the potatoes (test them with a knife - the knife should pass through the potatoes easily) then mash them with nob of butter and a bit of milk .Put the meat in a ovenproof dish cover with the potato, then put under the grill until the potato browns.

Made it for tonight tea (it just needs to be browned later and heated up)

I would called this a store cupboard recipes as we normally have all these things available

We had a store cupboard tea last night and it was gooooooooooood!

Tuna pasta bake
Big pasta
Tin of tuna
Cheese sauce made with the scrapings of cheese from the fridge - bit of roquefort, rind of gorgonzola, cheddar and a bit of goats cheese,
1 fresh chilli
and a manky leek going brown at the end braised in olive oil added before it was all squished together and left in the oven to brown
Surprisingly good variation on old kids fodder classic

Meat balls 

Given to me by mum i have no idea where this came from So i don't uses any measurements sorry

mince
flour
egg
mix herb
Chopped Onion and or chopped garlic


Bliz mince in food processor, add egg, herbs, garlic, onion, a wee bit of flour and bliz again until all is finaly chopped then removed from processor and make in to balls (don't make them to big, golf ball size is best) then roll in the remainer of flour and put in to a heated frying pan until cooked through.


Good for the freezer and keeps for a while. I have served them with pasta sauce on there own . Rice and tomato sauce, and also spaghetti. Another favour in the family is with chips and beans. A good pull out the 'freezer and add to any dish' dish.

I read somewhere that the way to tell if you are middle class is;- have you got all the ingredients for a recipe given in a posh sunday paper? If you have then you've made it! I can remember feeling really good the first time that happened to me. Now I realise it's because I like to make all my food from scratch in order to avoid all those horrible additives.

Cheaty pasta carbonara

Hardboil one egg per person and set aside.  Fry some bacon slowly (a rasher or two per person) in plenty of butter or oil (or a mixture works best  ;)) in a large pan.  Stir in a few tablespoons of plain flour to make a roux.  Season with pepper and a bit of salt and stir the roux over a low heat for a couple of minutes.  Add milk a little at a time to make a white sauce and cook slowly, stirring, until the sauce is only just bubbling.  Add a good handful of whatever cheese you like (grated).  Peel and chop the hardboiled eggs and stir them into the sauce.  Serve with whatever pasta you like.

A variation with bacon, stilton, peas and a good squeeze of lemon is also really nice  ;D

Pasta is always a good one as it goes with just about anything. OH also does a nice paella-type dish using tinned tomatoes, rice (obviously) and anything else lying around i.e. peppers, mushrooms, onions, garlic, leftover meat/chicken, salami etc etc. Yum!

Omlette is good too as you can add anything - I particularly like it with leftover boiled potatoes (sliced and fried to crispy before adding the eggs).

Pancakes!!!
