Braised pig cheeks - remove skin?

I'm following a recipe for pig cheeks braised in cider. :yum:  The recipe doesn't say to remove the skin, but it looks pretty tough. Should I remove it before cooking??????

Possum, I really don't have a clue but my pigs cheeks came without skin so I am assuming that says something.
Life is like a bowl of cherries, mostly yummy but some dodgy bits

Ah.....Yes. This was the first set of pigs that we had raised and the butchery side of things was a bit basic.


Thanks for the info. I'm off to sharpen my dissecting knife.
