Our 3 air dried hams are still hanging up as well...!
Year before last we slaughtered the pigs end of July and then salted the hams for 3 weeks then hung the hams - they turned out very tasty
Last year the pigs went at end of June, hams were again in salt 3 weeks then hung - as per start of post we haven't tried them yet so can't say whether they have suffered yet.
Have no idea about freezing for a bit then doing the slating etc sorry!
