Not made a Christmas cake this year. I normally make an eggless & sugarless one ( I know that sounds naff but it is quite nice ).

I never put sugar in heavy fruitcake like this - find it almost too sweet even without! And I've made cakes like this for vegans in the past; you are right, eggs aren't really necessary.

The marzipan has sugar, of course. And I never eat the icing anyway...

Made mine at the begining of October - took a peek last week and it looks okay so sloshed a bit more brandy over it (need a drucken smilie or a glass of wine)

Patience, patience... I'll put it on here once I get home. Saw another "alleged" Stollen at the market yesterday . Seems to be fashionable to call any loaf with fruit in Stollen these days...

Mine is done and being soaked in a quarter of a bottle of brandy.  I baked it about 3 weeks ago.
I shall marzipan it the week before Christmas and ice it about 2 days before Christmas Eve.
 
I love doing my Christmas cake each year, and particularly love having a husband who'll eat it with me 


It never looks glamorous. Just simple.
But it makes me happy when it is all done.
