We saved the juices, simmered some slices back in that tonight, luvly.
It is sooo lean up to other meats, just a thin layer of fat on the 'jelly' which we scraped off.
I wanted to mince some to make burgers, but can't decide which bits to chop up.
shoulder? (I separated the front leg from shoulder for easier packing) belly? ribs?
what do others do? I love sausages, but thats one for the future.

I like to have a clear out before winter, why waste money on feed?
'proper' billyboy to go yet, have to wait till the aroma fades.
Decided to get back down to 4 for easier keep during bad weather, then impulse buy, 2 little boers. surprised at how much hay we are going thru.

I don't have space to keep him if I want my girls to produce so he's got to go.  It would have been easier when he was younger and a right pain.  Now, he's a sweetie and so pretty.  He will taste nice though.  Looking into ear tags tonight.
