I seem to remember from my pig keeping course that all bacon /gammon is from female pigs.
I have 5 boars, 3 of which are going to slaughter at 26 weeks and I am looking to keep 2 back for 32 weeks for gammon and bacon .
Will this idea work ?

Yes boars are fine for bacon and gammon.

Our last lot of bacon came from a surplus boar and was pretty good, so long as they've not worked or been in close contact with girlie pigs they are just as good for bacon as gilts.

The use of boar and boar taint seems to have been discussed before and it seems that either some people can not taste the difference or that some boars don't offer a different taste.
For what it is worth we had a great debate with our neighbours about the potential taste of our boar. We did a home kill on him and his sister. Because the boar had testicles he was stunned - hung and his testicles removed before being bled out. The theory being that if you remove the testicles tres rapidement then you do not get boar taint.
I butchered the boar and his sister and we have since worked our way thru all their meat, hams,bacon and liver. We have not rejected or noticed any difference between the many cuts we have eaten.

My two boys went off at nearly 30 weeks and were the only two pigs on the premises. I did worry about boar taint and that I had kept them too long but they were fine. Have heard that if they get to the point of 'riding' each other then you could be in trouble, but to be honest mine were doing that for weeks Well one was But still no boar taint
