My plants are doing very well, got lots of chilli's coming . But don't seem to be ripening, the odd one or to are starting to think about it, but mostly green. So dose anyone know if you can use cayenne chilli's green.
Don't want to lose them as thing are starting to cool down here already.

Yes you can use them green - they have a different taste and are not so hot.  i would still wait for them to ripen though!  I've grown Cayenne this year, and they were late ripening, but I have probably harvested half of them now, and the rest are still ripening.  Are yours indoors?  Mine are in my conservatory and do get a lot of light - you never know - we might have an Indian summer!

I picked my first ripe one this morning . When they turn they go really quickly, it's great

Thanks ditw I didn't know that and have 4 in the poly. Will they be fine in there or bring in the house through winter?

Bert, mine are still green have used a couple already but hotter when red. I've also read that being mean with the watering produces the hotter chillie, so am trying it. Time will tell  ( sweating emotion  )

bring them in, any hint of frost and theyre done for. When theyve finished fruiting and have stopped growing, late november time, prune them hard back so just a few leaves are left. They will go dormant for the winter, just water them very occasionally, to keep the soil barely damp. Then in spring be patient, they will take alot longer to get going than a seed will but they will take off when theyre ready. ive kept one for 3 years, so far. Some people say theres no point keeping them and to grow as an annual but i think its fun trying.

I tried to over winter a few of my chilli's last year. I made the mistake of leaving them in the tunnel. The fact my tunnel cover blow off didn't help . Will take them into the kitchen this winter, make the boss look after them ( the poor little sods don't stand a chance, but I will try).
Can you do it with sweet pepper as well?

I have had a few for a year or so now,I kept the seeds from some of last years-and the year before that and they always produce fab chillies,mine are growing well at the moment though nothing ripening yet,I have still used a few and they have been great-I just hope that the hottest one ripen as have tried a new variety this year-Trinidad Moruga Scorpions lol!
