Coconut cookies

Made these today with the kids and they are so good, thought I'd share  ;)
8oz flour (from an american site that didn't specify, so I used half and half plain & SR, with hundsight you could probably use all self raising and leave out the bicarb?)
2oz butter
5oz sugar
4oz desicated coconut
1 large egg
Half a teaspoon of bicarbonate of soda
Quarter teaspoon of salt

Cream the sugar and butter, add the egg and mix well, add all dry ingredients mixing well.
Roll into small balls, place on greased baking tray and flatten with fork. Makes about 24 cookies.
Cook in a pre-heated oven (180/350) for 10 minutes.

Oh, they're good  :yum: :thumbsup: So good, you might want to consider making a double batch  :innocent:
Also think you could add oats, raisins, cinnamon & apple - loads of possibilities to try  :yum:
