I have my version but it's not authentic but everyone says that are well better than any packet they buy. It's not precise measurements either.
1 part sugar (caster or icing, I find that the granulated sometimes hasn't dissolved)
2 parts fat ( I use lard and butter)
4 parts self raising flour
2 parts sultanas( I soak them first just because I like them juicy)
Mixed spice as much or as little as you like. I don't think they traditionally had any in it.
I use the measurement "part" very loosely. If I am making a small amount I use a tablespoon... 1tbs sugar, 2 tbs fat, 4 tbs flour. If I am making loads it's a mug of sugar, 2 mugs of fat, 4 mugs of flour etc.
Rub fat into flour, add sugar & spice, add fruit, add a little water(just a few drops) to bring it all together into a very stiff dough, roll out dough and cut shapes.
I don't have a griddle but I do have a non stick panini maker. I cook them on just the bottom bit for 5 mins per side. Once they are cooked I like to coat with a little melted salted butter and dip them in spiced sugar.
Not very authentic but delicious.
See now I've typed all this I am going to have to go make some now!
