Our pullets are coming into lay; the eggs are still too small to sell, so I'm going to pickle some but just wondered if I can freeze eggs. If so, how do I do it ie should I seperate yolks and white and how long will they be good for?

You can freeze them as "scranbled" eggs (raw) ....I just make cakes and freeze them.

You can freeze egg whites with success. As mel says I use them for cakes and quiches and load up the freezer.

If you want a different meal that use eggs try thinly slicing potatoes layering them in an oven dish and covering with beaten eggs oven bake for about 20-30 mins and serve with veg and meat it is lovely. You can also use veg and potatoes and do the same

You can also sell the eggs.  We have two sizes - hen eggs and bantam eggs.  We don't actually have any bantams but the Scots Grey eggs are quite small so that's what we call them.  Our new black rocks are still laying small eggs so we add those into the boxes, although they are not quite so good as the SG eggs, which have a proportionately larger yolk.  But no-one has objected.  Most people prefer the larger eggs, but there are plenty who like the small ones too, for salads or children or posh parties.  I am charging £1.20 for the small ones, although £1 would sell them quicker.
