Rowan jelly ?
« on: September 14, 2011, 07:02:48 am »
Does anyone have a recipe for Rowan Jelly please ?  I know the berries are toxic raw  but when cooked they make super jelly ,  I'm just not sure of the detox procedure.

I do know that you should leave the berries to get a frost on them to remove the bitter taste. Alternatively, pick them and freeze them.

4lb rowan berries, washed and destalked
3lb cooking apples, peeled cored and 1/4's  ha ha i just chuck the whole lot in
1lb sugar for every 1 pint resulting juice

chuck fruit in pan barely cover with water and bring to boil. simmer for 30 mins or until soft then strain in jelly bag overnight.
measure juice, add sugar stir till dissolved then turn up to rolling boil test for a set after 5-10 mins

my neighbour has 2 rowan trees one with red berries the other with yellow....can either be used or do you have to use specific types of rowan berries
