Beetroot

What do you do with beetroot other than pickle it or make chutney?  I love it in wedges baked in the oven but mainly in winter and I've never seen beetroot frozen - any recipes as I picked my first half dozen today along with the first rooster potatoes and a few more onions  :yum:

Failing that, any good recipes for beetroot chutney/relish?

Never tried it myself by what about Borscht? Lots of recipes online.

grate it and put it in balsamic vinegar.. very nice

beetroot chocolate is nice and so is beetroot risotto!

I do all the usual but also boil and freeze loads for salads the next year.I sell loads , my best seller,I  have now none left to sell if I want some as well :)

I will boil and freeze some then - wasn't sure if it froze/defrosted ok as I'd never heard of it or seen it in supermarkets as frozen ;)  Will make some into soup to freeze too as that's my favourite soup :)  Not sure about borscht tho ;)

I just love beetroot and wish I had more too..
