tons of rhubarb - suggestions please

we have tons and tons of rhubarb. I have already made jam and got some home brew wine on the go but have no more room in the freezer.

suggestions welcome please

Same problem!  i made Nigella's Rhubarb and Cornmeal (polenta) cake and it makes a great pudding with custard, or just cake when cold. Will definitely do it again.

BH just LOVES rhubarb crumble and it's SO easy to make - IFF you have the rhubarb...

Live in a cohousing community with small farm for our own use.  Dairy cows (rearing their own calves for beef), pigs, sheep for meat and fleece, ducks and hens for eggs, veg and fruit growing

Try Ginny B's rhubarb champagne recipe. I just bottled a batch yesterday - it's just so incredibly pink!!

I've got to agree with the rhubarb chempers did it last year it was great. I do love my crumble to, i have two clumps and its so big this year i'm alreadt trading.

I make both jam and crumble with our rhubarb but I always add stem ginger to it to give it a kick.
Smallholding in Worcestershire, making goats milk soap for www.itsbaaathtime.com and mum to 4 girls,  goats, sheep, chickens, dog, cat and garden snails...

I agree, rhubarb and ginger jam is excellent. We also stew most of the rhubarb and freeze it, ready to eat in later months.  :yum:

Can you just cut it up into chunks and freeze it or does it have to be stewed beforehand?

have got a batch of rhubarb champers brewing away so should be good for some summer nights round the bbq.

will have to make more room in the freezer me thinks! ;D

Anybody got any ideas on what to do with the leftover rhubarb once they've been used for champagne??

We've just made 10 litres into the fermenting bin which will give us a couple of pounds of rhubarb bits at the end :D :D :D

You could also try Rhubarb and Ginger sponge pudding. There's a recipe on my blog, pinched from the telegraph. Very yum.

The herb Swet Cicely takes the bitterness out of rhubarb and looks lovely in the jam and crumbles etc.

Rhubarb wine is lovely, it's one of the things I want to do when I start making my own wine. Maybe I'll ask the inlaws if I can toss a few pieces into their next batch.

Extra rhubarb around here turns into one of two things: 1) cobbler, or 2) sugary starchy jam that goes on pancakes.
