Fresh local venison is a wonderful thing

Headed to one of the local farms over the weekend go see if the roe on the farm have started to rut, they haven't but the muntjac seem to have become more prominent, this time last year I had only seen them on the farm by camera once in blue moon, however saw 2 and heard a third this day. As they were seemingly more prominent I thought it a good idea to try and get hold of one. Luck would have it in the distance I could see one tearing around the hedgerow, dipping in and out. When he went in it gave me time to get low and lead over in his direction, and when he popped back out I'd stop and wait. Then do the same again. Managed this from c.300yds down to 80yd before calling him towards me to get into a safe position to take the shot.

Fast forward a couple of days and the venison is more or less sorted and ready to package up and pop in the freezer. The Mrs wants mince so have diced the majority of the meat which I will run through the mincer, but muntjac is one of the best venison you can get so had to keep some back for steaks

I will admit that's more skillful than our method, which is to wait until the car in front hits one, then strap it to the bonnet and drive home  ;D .

I find the butchering really quite enjoyable and am still very much a novice at it I would say
