In a pickle...... or not!

I have some beetroot at the allotment
I have a jar of Sarsons pickle vinegar .........

All I can find is cook and prepare the beetroot, bung in (technical term in this house!) sterilised jars and pour in vinegar.

Cold vinegar in hot jars....?

Help!

I do it this way:

Clean beet leaving a little stalk on them so they don't bleed as much
Boil beets for 20 to 40 mins (ish depending on size)
De-skin and slice beets
Heat up vinegar till boiling then turn down to simmer
Add sugar to vinegar - dissolve totally
Add beets and cook for 10 mins
Add beets to jars
Pour over hot vinegar
Seal lids and allow to cool.

Thanks alang that makes sense

But........

I’m still being a bit thick (as co-workers will testify to!) as the vinegar jar says use it straight from jar as it already has all it needs in it.
How much sugar do I put in?  It’s a 1.14l jar of pickling vinegar

I find beetroot is sweet enough, so I just use neat white vinegar.  Cook beetroots, skins and tops will slide off, bring vinegar to boil but keep windows open or you'll get gassed lol
Take off heat as soon as it reaches the boil, pour into jars over tiny beets or sliced bigger ones, use a fork in the jar to prevent breaking.

Try to leave as long as you can as they are delish!

I only used the sugar the second time i made it because the first time i found the mixture a little to tangy for my liking.

I find it really satisfying to be able to eat something you produce yourself. Yes the vinegar is bought in but the beets are yours and it maybe a placebo effect but they taste better

Try this recipe:-  Boil the Beetroot then slice and put in jars.  Use 1 pint of white vinegar, half a pound of sugar, One and a half dessert spoons of salt, One and a half teaspoons of made mustard, One level teaspoon of pepper. Boil together for 5-10 mins. Pour over Beetroot in jars while still hot.     Stunning Pickled Beetroot.
