Would the grass paths not get wet and slippery in winter?

Probably - though I don't envisage doing loads in the raised beds in Winter time. My fall back situation is to use some of the old tiles that we saved when we had a new roof on the house to make a sort of rubble path which they turn into when you walk on them.
