Anyone got a recipe for pickling courgettes?

I would love to try pickling some courgettes this year- does anyone have a recipe or tips?

Courgette chutney is what I have made as well. I would have thought they were too soft to Pickle, but waiting for a recipe as well.( Make good jam)

There is a courgette thread in the recipes section - would be great if you could post recipes there - I have hundreds of the things - we can't eat them fast enough!

hubby says this is the best relish i make...and he's hard to please.  i have 7 plants and all our excess gets made into this - and it wont be enough to last till next year!

Pickling mix:~500ml cider vinegar
120g sugar
1&1/2 tsp dry mustard
1&1/2 tsp crushed yellow & brown mustard seed
1 tsp ground turmeric

500g courgettes
2tbsp salt
1 sm onion

1.slice courgettes &onoin very thinly into discs(easier with a mandoline!)Place in bowl~add salt & mix well.cover with very cold water & stir to dissolve salt.
2.after 1hr drain & dry thoroughly~either in salad spinner or between towels.
3.Combine pickling mix in saucepan & simmer for 3 mins.set aside until just warm.
4.Mix courgettes & onion with the cooled liquid.~transfer to sterilised jars.cover & refrigerate for at least a day before eating.
Will keep indefinately in fridge.

Absolutely yummy with cheese & crusty bread!
can also add dried chilli flakes to the mix for an added kick! ENJOY!

Hey Nicky can you post the chutney recipe please?
I have some yellow ball type courgettes this year - nice but getting fed up with them!

1 kg courgette diced to 1cm
4 lrg red onion 1cm diced
3 garlic cloves
75g root ginger finely chopped
2 tsp mustard seed
1 tbsp coarse ground coriander seed
500ml cider vinegar
200g golden sultana
350g sugar
1tbsp salt
4 tbsp fresh chopped dill/fennel

chuck all in pot, NOT the salt, sugar or dill.
bring to boil, then simmer for 15 mins until wee bit soft.
add sugar and salt simmer 15 mins till liquid evaporates
add the dill, simmer 2-3 mins
pot in hot sterilised jars, seal and label.
