Requirements for poultry processing and selling

Small producers (i.e. if you produce less than 10k chickens a year) are allowed to slaughter and process their birds on farm. Do you know what requirements/regulations do you have to comply with to actually be able to legally sell your chickens to customers? Let's say we process around 2000 a year, I assume you need a clean and certified slaughter equipment. Do they have regulations for, for example, size of room, table?
What else should I check???
Growing loads of fruits and vegetables! Raising dairy goats, chickens, ducks, rabbits on 1/2 acre in the middle of the city of Leicester, using permaculture methods.

I think you need to register with your local health and safety office.

there is quite a bit of information on the food.gov.uk site when I last researched it.

You need to make sure you keep track (dates, batch numbers, source etc) of the feed you use for traceability reasons.
