Courgette Cake
Pinched and adapted from an original Nigel Slater recipe
You need
200 G Butter
200 G Caster sugar
   2    Fresh eggs
150 G courgettes coarsely grated
   1    medium apple      "          "
200 G Plain Flour
         A Large pinch of salt
        1/2 a teaspoon of baking powder and the same of powder cinnamon
 60  G Broken walnuts (Nigel used pecans)
100 G Mixed dried fruit (" only used sultanas)

What to do
Pre heat the oven to Gas 4
Butter and line a loaf tin ready

Cream the butter and sugar together until its light and fluffy
Beat the eggs and fold in carefully one at a time to make sure they are well distributed
Wring the excess moisture from the courgettes and the apple and stir into the mix
Mix the powders together (flour salt etc;) and stir into the mixture
Carefully fold in the Dried fruit and nuts.
Spoon the mixture into your prepared loaf tin and place in the center of the oven
cook for about an hour or until the top is nice and golden and firm to the touch
Allow the cake to cool in the loaf tin before turning out.

Just made your courgette cake George. Made a few adjustments to your recipe. instead of raisens I put chopped Apricots and grated a pear (as I didn't have any apples) Also a pinch of ginger, It looks yummy but I haven't tasted it yet.

My mother in law makes courgette cake and it's lovely. I will try this recipe

Absolutely scrummy - I was a bit dubious as I'm a lazy cook and just threw it all in the KitchenAid with the K beater, rather than 'fold in carefully'.

Must remember to line & grease the loaf tin next time too - I used hubbys new-fangled squidgy silicone one which I never grease for bread as it just pops out, but the cake wanted to stay  ::)

Apart from that it's dee-lish! I used walnuts and sultanas as that was what I had in. My courgette was a yellow one too if that makes any difference?

Hello Sharon I honestly have a major problem I'm not trying to be big headed or anything like that but I always assume folk know what I'm on about and they don't.If I do anything like this I put it in a paper loaf liner it sticks like the proverbial to a blanket to the paper but it doesn't matter.Thanks for the report I hope more try it now you have said it is good.I don't have a Kitchen aid I have a Chef I honestly could not manage with out it I think my only criticism of it it will not fold slowest speed is far to fast.I have never been to B'ham or Olympia when they are there doing demo's but I have wrote to them but they never answer my mail.How fast does yours turn I think that should be slow shouldn't it  ;D I still like the Chef though I have most of the bits bar the pasta makers I hate lasagne's and FISH ;D ;D ;D :farmer: :wave:
