This thread has wandered from spuds to elderflower. ???
My wife says pick off the flower heads from the stalk as that is where the yeast is to make it ferment. ;)

The evil elderflower murky mess is going in the compost bin - will have another go and this time only use the flowers!

Vair You will have a lovely Jobie if you use only flowers and scald them to kill the wild yeast it can be a nuisance add some wine yeast from the home brew shop Then you have control like I have said in the post 5 back. Good Luck Lass  :farmer:

Not necessary lass put your flowers in your pail you are going to use boil the kettle and pour 6 pints of boiling water on them swish them about and Stir in half the sugar make sure its dissolved Now you have all the pollen and flowers the lot including that Lady bug doin the back stroke fish her out you don't want her.Cover the pail with a damp tea towel and let it cool to blood heat or a little less if you wish The in a coffee mug get 2 inch's of the brew and scatter the yeast on the top. When the mug is full tip all the contents into you pail stir it well in.This way you know the firmentation has started You can just spread the yeast straight into the flowers if you wish. Now pick up where you are on the recipe & below and continue Don't forget to stir it every day will you Twice if you have time when you get up and when you retire last job after puttin the cat out :D :farmer:
