Christmas boxes - hams etc
« on: October 08, 2016, 08:54:22 am »
Hi everyone.  We have 2 OSB weaners which will be ready to go at the end of November.  We want to offer our customers a 'Christmas' box with a decent sized ham, chiplolatas, sausage meat and possibly some bacon.  Do you know if this is possible and how much you'd get from each pig?  Thanks in advance and sorry to mention the C word... :pig:

You'll only get 4 hams and if you use the bellies and shoulders for sausages and chipolatas there won't be that much left, unless you start doing Bath chaps and brawn/.

Your sausage will be ready before your bacon and your bacon before your ham!

Who is going to make it for you?Do they have the time on the run up to Christmas. Depending on your ham size it would be a push to have it ready in time for Xmas.

How much would you get? Couldn't say without seeing your pigs.

Work off you actual useable cuts being 48% of the live weight of the pig
Hams can be ready in time but would need to be brine injected which many argue produces a more consistent product anyway.
Although you will only get 4 true hams smaller joints lend themselves to gammon which may suit some

indeed, we send different pigs for the bacon and other products at christmas, although some things we do freeze off the bacon pigs for christmas as well
