Hi, can anyone recommend a decent publication regarding the breeding and raising of turkeys, I have looked on Amazon but am unsure of which will give me idiot proof information.

See if you can get hold of a copy of Starting with Turkeys by Katie Thear.  It's the only one I've ever used and so far we have a 100% survival rate over the last six years (fingers firmly crossed).
