Mutton information

I've got a few ewes to go. I have someone who wants half a ewe and I'm trying to work out how much it'll weigh and how much to charge? They are big commercial types.

Is it like lambs and they kill out at roughly 50%?

Any information welcome?

Without knowing how much fat they're carrying it's difficult to give an answer with any accuracy. But 50% isn't a bad guide.
 With something like that I estimate how much I would expect for the animal at market, add on my time and slaughter costs and any additional profit and give that as the cost for half an animal.  Easier to charge for half carcase than price per pound.

I was thinking of 80  pounds for half and if it was 50% would be around 20kg.
