We are pre-selling Hebridean hogget, with several 22 month old wethers due to go to the abattoir in the next month.
Hebridean hogget is a flavoursome meat, with less fatty greasiness than in lamb, and with more flavour as fat is laid down in a marbled fashion like Aberdeen angus beef.
We butcher into the usual cuts, roasts, chops and a bit of mince and/or dice. If you have specific requests, let us know and we will try to accommodate you (there may be an extra charge for change of butchery, and there will be a charge if you would like your meat vacuum packed).
We will sell boxes of half a hogget (minimum 6.5kg for £80) or whole hogget (minimum 13kg for £150).
We will take a deposit, and arrange delivery/collection to suit between Dingwall and Banff once orders confirmed.
