Not genuine H but the boys liked these home made hot dogs
3/4 lb nice lean beef
1/4 lb Pork Fat
1/4  cup of finely minced onion
1    Small finely minced clove of garlic
The following are all finely ground
1 T/spn sweet paprika
1 T/spn coriander
1 Tsp white pepper (less if you want)
1 t/spn salt
1 T/spn coriander
1/2 t/spn Mustard seeds
11/2 t/spn sugar
1-2 fluid Oz's milk
1 white of an egg

Method Mince the meat through the fine plate in the mincer and mix together in a bowl.
Blitz the garlic and onion in the chopper and combine all the spice with the onion mix
now combine the spices with the onion mix Now stir in the meat and egg white.Pass all
through the fine hole plate mix in the milk The mix is now quite sticky so place it in the
fridge for an hour Now stuff into chip size skins and then twist at 6 inch's.Place them in
a pan of boiling water and simmer gently for half an hour. Then place them in your smoker
if you wish They will keep in good condition for a week then you canfreeze any left over

All you need now is some hot dog buns and a hot Barbie :farmer:  ;D
Don't do today what can be put off until tomorrow because today will be yesterday tomorrow
