I usually use the flowers for cordial but don't really have a use for the berries as I find them fiddly.  I made jam one year but I rarely eat jam so it won't need repeating for quite some time.  And I don't have wine making stuff which is the other usual suggestion I get.

Has anyone made anything else with elderberries?  Do they work in a bottle with spirits and sugar like damsons and sloes?  If so, gin, vodka, rum or other recommendations?  I love damson gin but haven't found a sloe in years and my damsons had a bad year.  Elderberry gin?

Or a mixed berry something with brambles which I also have in the freezer?  Would they go in a crumble with apples?  Just trying to make a tasty alternative to use them before donating all to the birds!
