Recipe I saw posted elsewhere - we've tried it and it tastes wonderful!

Portion (cleaned!) rabbit ยจ

marrinade for 3 days (in the fridge) in red wine, shallots or onion (sliced), parsley, carrot (sliced), salt, pepper

cook very slowly in the marrinade, in a moderate oven for 4-5 hours
enjoy!

I have made a similar casserole except it is made with cider - farm made Normandy cider - haven't tried the shop bought ones, but that could be a personal choice for anyone prefering a sweeter cider/taste.

Marinade in cider etc for 24 hours and cook in cider also adding your prefered veggies.

It gives a wonderful gravey but I guess a slighly lighter one than the one made with red wine. Also a dash of honey is nice as well!!
